Peanut Butter and Cacao Smoothie

After all the indulgence from last week (oops, it was a sugar-loaded Halloween this year!) it's time to share something really healthy yet still delicious. This peanut butter and cacao smoothie is by far my favorite beverage when I need something to lift my mood, make me feel energized and full. You know, those late afternoon sugar cravings, or when your stomach is growling cause you've had a very busy day and skipped a meal. Delicious smoothie to the rescue!

If you want to achieve a creamier texture I highly recommend to use frozen banana, it'll make the smoothie extra rich and also refreshing. I know the temperatures are dropping for all of us who are in the northern hemisphere, and maybe you prefer a cup of hot chocolate, but believe me when I say there's no better way to wake you up (or recharge your batteries after a workout session) than having a cold smoothie. Of course, feel free to use room-temperature bananas; it'll be equally delicious! ;-)

Peanut Butter and Cacao Smoothie

(1 serving)

Ingredients

1 cup unsweetened oat milk.

1 tablespoon raw cacao powder.

1 frozen banana.

1 tablespoon peanut butter.

1 teaspoon lucuma powder, optional.

*Notes:

- Feel free to use your favorite dairy-free milk: almond milk, rice milk, etc. But always choose the unsweetened variety for a healthier smoothie; if the bananas are ripe enough you won't need to add any sweetener.

- Don't forget to chop the banana into coins before freezing.

- Instead of lucuma powder you can add a scoop of vegan vanilla protein powder, but most probably you'll have to increase the amount of milk.


Directions

Place all ingredients inside the jar of a blender and pulse until soft and creamy. If you have a high-speed blender the smoothie will be ready in a few seconds, but make sure there are no lumps of frozen banana to get a super creamy smoothie.

Serve cold and enjoy!
