Chocolate Chia Pudding Parfait

Chia pudding is truly a lifesaver whenever you are craving for something sweet yet healthy, it's also my perfect afternoon snack or quick breakfast (if I prepare it the night before) with lots of fresh berries, a dollop of creamy coconut yogurt and nut butter.

If you want your chia pudding to look extra fancy simply serve it in a glass alternating different layers of pudding, granola, yogurt and homemade berry coulis or chia jam. To top it all off add your favorite seasonal fruit and enjoy your nourishing and yummy chia parfait! We don't always have the time to serve food in a beautiful way; let's be honest, on weekdays we simply throw everything together in a bowl or plate and eat in less than 30 minutes. But you can prepare your chia pudding overnight and creating the layers the day after will take you less than five minutes. I don't know about you, but when I'm having a bad day the pleasure of enjoying something beautifully served makes me feel better. :-)

Chocolate Chia Pudding Parfait

(1 serving)

Ingredients

1/2 cup unsweetened almond milk.

2 tablespoons chia seeds.

3 teaspoons raw cacao powder.

1 tablespoon pure maple syrup.

1 teaspoon lucuma powder (optional).

- To serve:

Granola.

Creamy coconut yogurt.

Blueberries.

Directions

In a small mixing bowl stir together almond milk, chia seeds, cacao powder, maple syrup and lucuma powder. Mix well with a fork and make sure there are no lumps of chia seeds.

Transfer the mixture to an airtight container and let it set in the fridge for at least 30 minutes, or overnight.

Serve in a glass and alternate different layers of chia pudding, coconut yogurt and granola. Top with fresh blueberries or your favorite wild berries. I don't recommend to store the parfait once it's assembled because the granola will become soggy.

This recipe makes one serving but you can easily make a double or triple batch.
