Mocha Layer Cake

Since I have lots of unpublished recipes this time I went back through my archives and found this good, impressive-yet very easy to make- cake.
Recommended for all the coffee and chocolate lovers, these two ingredients make an excellent team together!
This mocha cake is delicious, tender and moist so don't be afraid of the coffee flavor, you won't find it too strong nor bittersweet, believe me, coffee and chocolate really are a good combination.
I made it for my dad's birthday last year and he  (a true coffee fan) absolutely loved it and the rest of the family too! It's a surprisingly good cake.

Mocha Cake and Coffee Frosting

Ingredients
For the cake:
300g flour.
2tsp baking powder.
1tsp vanilla extract.
3 eggs (whites and yolks separated).
125ml milk.
4tbsp instant espresso powder.
100g unsalted butter.
300g sugar.
100g chocolate, melted.
125ml cream.
For the frosting:
175g chocolate, melted.
50g butter.
150ml espresso coffee.
1tsp vanilla extract.
300g confectioner's sugar.

Directions
Beat together all the ingredients (cold) for the frosting, beat until well combined and store tightly covered in the fridge for 3-4 hours.
Preheat oven to 350ºF (180ºC). Grease and dust two 20cm (8 inch) cake pans.
Mix flour, vanilla extract and baking powder and sift together.
In a small saucepan, pour half the milk and bring to boil, add in the coffee and stir well. Add the rest of the milk. Set aside and let it cool.
Whisk butter and 200g of the sugar (2/3 of the sugar amount). Add in egg yolks, beat well and add the melted chocolate.
Add in the dry ingredients (flour, vanilla and baking powder) to this mixture and also the milk and cream.
Whisk egg white and add the sugar until stiff peaks form.
Finally add in the egg whites mixture to the batter and pour into the cake pans.
Bake for 30 minutes approximately, until a cake tester stick comes out clean.
Transfer to a cooling rack and let cool.
Split each cake into two layers and spread the coffee frosting between each layer and the rest for the top and sides.

    1. Hola Marta! Cuánto tiempo que no hablamos! Por cierto, te sirvió la receta del bizcocho de yogur?
      Este pastel lo hice hace casi un año, pero por una cosa u otra la receta se me quedó olvidad entre mis ficheros y ahora la he encontrado! :-p. Como en casa gustó mucho creo que este año volveré a hacerla y así perfecciono la receta.
