Banana and Walnuts Pound Cake

This delicious pound cake has been my first time using bananas as the main ingredient of a dessert. If you have some over ripe bananas on your kitchen counter do not throw them away! With just some more ingredients you can bake a really sweet, rich and tender pound cake.

Ingredients
100g softened butter.
150g brown/caster sugar.
2 eggs, slightly whisked.
100g chopped walnuts.
2 smashed ripe bananas.*
2 tbsp milk.
225g self-rising flour.


Directions
Preheat oven to 180ºC (356ºF). Grease a pan with butter and line it with wax paper (cakes that contain fresh fruits tend to stick to pans, so the paper is highly recommended).
Beat together butter and sugar, add in eggs.
Set aside 25g/1 oz of walnuts, then fold the rest into the creamed mixture with the bananas and milk. Pour in the flour.
Spoon into the tin and sprinkle over the reserved walnuts.
Bake for 55 - 60 minutes until risen,
Stand for 10 minutes, then turn out, remove the lining paper and cool.

*If the bananas are small you can use 2 more.
