Vegan Linzer Cookies

There's only one week left for Christmas Day so I think it's about time to share with you a traditional recipe for these days, something sweet and delightful yet healthy enough to make you feel less guilty. Cause you know...we are all gonna pack on some pounds during the holidays but it's not that hard to find some balance and cook low-fat meals. Anyway, we have a long new year ahead of us to torture ourselves in the gym and eat veggies like there's no tomorrow, so don't be too strict either. 
As the year is coming to a close I wanted to do my third and last collaboration of 2013 with Yummly (my previous guest recipes were a Sacher Torte and an Apple Crumble), so I wrote this exclusive recipe for their blog.
This is the vegan version of the classic Linzer Cookies recipe and they came out so good! With the enough dose of sweetness, spiced and a party for your taste buds.
